Doritos Taco Salad

Doritos Taco Salad is a super quick and easy dinner.  I love this taco salad and it’s one of my favorite quick dinners.

It has been a crazy couple weeks.  My husband had a tooth cut out before Memorial Day and it wasn’t healing like it was supposed to.  He’s been trying to eat soft foods only.  I was making mashed potatoes, pudding, soup, etc.  By the time he started feeling better, he was craving everything.

We’re kind of on a Taco Bell kick lately.  That’s one of his favorite fast food places so I try to make his favorites from there.  I made these Crunchwrap Supremes a couple weeks ago.  This week I re-created the Doritos Tacos into this Doritos Taco Salad.

We love tacos but it gets old eating them the same way all of the time. I like making taco salads and switching up the ingredients to make new recipes.

This is another recipe where if you can make ground beef, the rest of this recipe is a breeze.  This dinner is able to be completed in under 30 minutes.

 

On to the recipe…

In a medium skillet, break up and brown the ground beef.  When cooked through, follow the directions on the taco seasoning packet to season the beef.  Put the beef in a bowl big enough to hold all of the taco salad layers.

 

Spread the shredded lettuce over the beef.

 

Sprinkle the shredded cheese over the lettuce.

 

The next layer is tomatoes.  Spread them out over the cheese.

 

Break up Doritos into medium sized pieces and pour two cups of them over the cheese.

 

Drizzle Catalina and Ranch dressings over the top of the whole taco salad.

 

You can leave the taco salad layered and serve it.  Make sure that you use a large spoon to get all of the layers for each person.  I like to mix it all together so that everything is combined.  It doesn’t look as pretty as the separated layers but you definitely get all of the flavors.

 

 

This taco salad is so good and it’s another recipe that I don’t mind to eat left over.  Like I stated in the notes, if you are planning to eat it left over, add the Doritos to each portion instead of in the whole salad.  They will get soggy if mixed in with the dressings.

Of course, this recipe is flexible so if you want to leave an ingredient out, add more of an ingredient, or if you want to add extra ingredients to it, it’ll still taste great.  Some ideas might be: jalapenos, different dressings, chicken instead of beef, corn… the possibilities are endless.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 head lettuce shredded
  • 2-3 tomatoes diced
  • 3/4 cup cheese shredded
  • 2 cups Doritos broken
  • 1/2 cup Catalina fat free
  • 1/4 cup ranch dressing

Instructions

  1. Break up and brown ground beef.  Follow directions on taco seasoning packet to season the ground beef.

  2. Once your seasoned ground beef is done, start layering the rest of the ingredients on top of the beef in a large bowl.

  3. Layer the shredded lettuce on top of the ground beef.  Spread the diced tomatoes over the lettuce.  Sprinkle the shredded cheese on top and then the Doritos.  

  4. Drizzle both dressings (Catalina and Ranch) over the top.

  5. Serve layered with a big spoon so each person gets each layer OR combine all of the layers together and serve.

Recipe Notes

If you are planning to make enough for leftovers, you might want to consider putting the Doritos on each individual portion instead of in the whole taco salad.  They will get soggy if left with the other ingredients and kept in the fridge.  

If you do leave the Doritos in and they get soggy, you can add more to give it the crunch again.
