Some nights you just need a quick, go-to meal that you know everyone will love and you won’t be in the kitchen long.

This is also a great meal to have the family help make.  Each person can make their own sandwich or you could do a family assembly line.

 

Only 5 ingredients is all you need.

Sourdough bread, mozzarella cheese, pizza sauce, butter, and pepperonis.

Butter the outside of 2 pieces of bread for each sandwich.  I use sourdough because it’s a heartier bread and really keeps the sandwich together.

Put a spoonful of pizza sauce on the non-buttered side of one piece of bread.

Add the pepperonis and mozzarella cheese on top of the pizza sauce.

Place the other piece of bread on top, non-buttered side facing the pizza ingredients.

Place in a panini maker for 1-2 minutes until toasted.

If you’d rather make open-faced sandwiches in the oven, do everything the same but don’t include the second piece of bread.  Place on a cookie sheet and cook in the oven until the cheese is melted.  You can do this at 350 degrees or under the broiler.  Watch carefully so they don’t burn.

Pepperoni Pizza Panini

Quick, easy meal that the whole family will enjoy.  Pepperoni pizza panini's are simple to make with only 5 ingredients.

Ingredients

  • 1 loaf sourdough bread
  • 1 pkg pepperonis
  • 1 jar pizza sauce
  • 2 cups mozzarella cheese
  • 16 tbsp butter more/less

Instructions

  1. Butter one side of each piece of bread.  I estimated 2 tbsp of butter per piece of bread but you can use less.  It depends on how big your bread is and how much you put on it.  You want the whole area covered with a thin layer.

  2. On the non-buttered side of one piece of bread for each person, place the desired amount of pizza sauce, pepperoni, and mozzarella cheese.  Make sure the cheese is on top so the top piece of bread will stick.

  3. Place the non-buttered side of the other piece of bread and lay it on top.  So each buttered side of the bread should be on the outside.  

  4. Place one sandwich at a time in the panini maker for one to two minutes until golden brown.

Recipe Notes

To cook an open faced pizza sandwich, do everything the same but you will only need one piece of bread.  You will not need the extra buttered top piece.  Place on a cookie sheet and bake at 350 degrees until the cheese is melted or place under the broiler until the cheese is melted.  Watch carefully so they don't burn.
