Freezer Breakfast Sandwiches

Breakfast prepping is a great way to have a good, quick breakfast.  No more grabbing packaged breakfasts full of sugar on your way out the door.

School is back in session for a lot of kids and that means feeding them a good breakfast to start their day off right.  My step-son has to be at school super early so I wanted to make sure he had something that he could eat quickly on his own but was also healthier than packaged, sugary foods.  I did some prepping and made him 14 breakfast sandwiches in 30 minutes.

He said they are just like having fast food breakfast lol

 

Breakfast Prep Sandwiches

 

You can make these in any combination and as healthy as you want.  They only take about 1 minute to reheat.

I went for thin bagels and English muffins for the base this time.  Each sandwich includes either a sausage patty or a piece of Canadian bacon (slice of ham), egg, and cheese.

The eggs were scrambled and then baked on a sheet pan.  You can cut them in circles to match the bagels and muffins but then there is waste leftover.  I just cut them in squares to match the size needed.

Make sure to buy the Ziploc type bags that are labeled for freezing.  Lay each bag out on a table or counter with a bagel or English muffin open on each one.  I first put the pre-cooked sausage patties or Canadian bacon on the bottom piece of the bases.  Then I layer a piece of the egg and then top with cheese.  Place the top of the base on each one and place each sandwich in a bag.  Seal and place in the freezer until ready to cook.

My husband has found if you wrap the frozen sandwich in a paper towel to microwave it in, it keeps the bread softer and tastes better.  So, wrap in a paper towel and cook for around 1 minute depending on your microwave.  It may be a good idea to test one the first time by cooking a little less and then adding 10 seconds at a time until it’s cooked perfectly.

Some other ideas: egg whites instead of whole eggs, different flavors of cheese, flavored bagels, thin chicken breast slices, different sauces on the sandwiches, adding bacon, using turkey sausage, and so many more combinations could be made.

Freezer Breakfast Sandwiches

Breakfast sandwiches prepped ahead of time and placed in the freezer.  Perfect for kids or parents on-the-go.  Ready in approximately one minute.

Ingredients

  • 1 pkg english muffins (6)
  • 1 pkg bagel thins (8)
  • 1 pkg sausage patties, pre-cooked
  • 1 pkg canadian bacon slices
  • 1 pkg cheddar cheese slices
  • 1 dz eggs
  • 14 ea sandwich bags, made for freezer

Instructions

  1. Pre-heat oven to 350 degrees.

  2. In a large bowl, whisk the eggs until combined.

  3. Spray a sheet pan (that has high enough sides to hold the eggs) with cooking spray.  Approx. 12 x 17 size.  Make sure it is coated good all over and up the sides so the eggs do not stick.  Pour the eggs in the sheet pan and cook for 13-15 minutes.  They should no longer be runny but shouldn't brown.

  4. While the eggs are cooking, place each bag out flat on a table or counter top.  Make sure they are open so you can easily just stick the sandwiches in.  Open each bread base and lay open on each bag (bagel, English muffin, etc.). 

  5. Place one piece of sausage or Canadian bacon on each bottom base.  Lay one piece of cheese on each top base.

  6. Once the eggs are out of the oven, cut them into squares as big as the sandwiches.  I used one of the cheese slices to help me measure the right size.  Place a square piece of egg on each piece of meat already on the sandwich.

  7. Place the tops on each sandwich.  You should have top of the sandwich, cheese, egg, meat, bottom of the sandwich.

  8. Put each sandwich inside it's bag, close up trying to get any air out inside the bag, and place in the freezer.  

  9. When ready for a sandwich, take it out of the bag.  Wrap in a paper towel and microwave for approximately 1 minute.  Make sure your meat products are cooked through.  

Recipe Notes

I have read that these sandwiches will last 1-3 months.  I am not an expert and it depends on what you place on the sandwich.  Please read all packages carefully and follow their suggested dates to consume by.  I try to only make the amount that I know will get eaten within 2-3 weeks to make sure they are safe.
