Ingredients

  • 1 loaf french or sourdough bread
  • 1 qt oil for frying
  • 2 ea bananas
  • 4 ea eggs
  • 1 1/3 cup milk
  • 1 tsp vanilla
  • 1 tbsp sugar
  • 1/2 tsp cinnamon
  • 2 tsp cinnamon for coating
  • 3/4 cup sugar for coating

Instructions

  1. Fill a pot with a quart of oil and start to preheat to 350 degrees. You can also use a fryer if you have one.

  2. Prepare the cinnamon and sugar mixture for coating the toast after frying by mixing 2 tsp cinnamon with 3/4 cup sugar.

  3. Prepare the batter by whisking the eggs, milk, vanilla, 1/2 tsp cinnamon, and 1 tbsp sugar until combined.

  4. Slice the bread into 3 inch slices. You should get 4 pieces depending on your bread. Then cut a slit along the top of each piece to form a pocket for the bananas to be stuffed in the bread. Don't go all the way through to the bottom of the bread. Just down enough to fit the bananas in.

  5. Cut each banana in half lengthwise and crosswise. You should have 4 long, thin pieces of banana. Stuff two pieces into each bread pocket.

  6. Dip the stuffed bread pieces into the batter and make sure all sides and middle is coated. Begin to fry one or two pieces of bread in the oil.

  7. Cook 2 minutes on each side until golden brown. Remove and place on a paper towel to get excess grease and then immediately coat in the cinnamon-sugar mixture.

  8. Continue frying and coating in the cinnamon-sugar mixture until all pieces are finished. Serve immediately with syrup.
