Banana bundt cake is moist inside and has a slight crunch outside. Perfect for breakfast or a snack.
I love all things banana so banana bundt cake is one of my favorites. Bananas are just the perfect sweetness and make any recipe taste good. I especially love them in desserts, smoothies, or just eating them on their own.
My grandma always cut them up for me with a little sugar when I was little. I can remember the bowls she put them in and the special fork I used at her house. I love having memories like that.
My family loves bananas so I buy them frequently. They usually eat them up quick but sometimes I have brown bananas that I don’t want to go to waste. That’s the perfect time to make banana recipes.
I created this recipe using my favorite banana bread recipe but trying out the pudding mix added in. Everyone loved it and I’ve been asked by several people to make it again. It turned out super moist with this delicious crust on the outside.
Whenever I bake cakes, cupcakes, breads, etc., I use baking cooking spray. It has flour added to it. I spray generously and nothing sticks. I also think it gives that crust texture that everyone was talking about. I’ve used the brand name versions but this Market Pantry version works just as well.
I hate doing dishes so I’m not one to separate out dry and wet ingredients. I don’t think on most recipes it makes any difference. So… I added all of the dry ingredients to my bowl.
Then I added in the wet ingredients. Make sure to smash up the banana before adding them.
Mix on medium speed until everything is combined. After generously spraying your bundt cake pan with cooking spray, pour in the banana bread mixture.
This is the final result. Perfect, moist banana bundt cake. It’s banana bread with a crisp texture on the outside of each piece.
Banana Bundt Cake
Ingredients
- 5 ea bananas, mashed over ripe are the best
- 4 ea eggs, beaten
- 2/3 cup vegetable or canola oil
- 2 cups flour, all-purpose
- 1/3 cup granulated sugar
- 1 2/3 cup brown sugar
- 1 bx instant vanilla pudding 5.1 oz
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp baking powder
Instructions

Preheat oven to 325 degrees.

Add all of the ingredients to a bowl of a stand mixer (or use a mixing bowl with hand mixer). Mix until all ingredients are combined.

Coat a bundt cake pan with cooking spray.

Add the banana bread mixture to the bundt cake pan.

Place the pan in the oven and bake for about 1 hour. I usually check it at 45 minutes and every 10 minutes after that. To tell if it’s done, a toothpick or knife should come out clean after inserted into the middle.

Serve immediately, or once cooled, place in a airtight container.
