Maple Pancake Bites with Bacon

Pancake bites with a maple frosting and topped with bacon crumbles.  The perfect mix of sweet and savory for breakfast.

The worst part of loving to cook is eating all of the food… especially when you are trying to lose weight.  It’s even harder when you have delicious, pancake bites you can just pop in your mouth one after the other.

I’m ashamed of myself.  I ate so many of these that I lost count.

Making these with pancake mix saves so much time and energy.

I wasn’t sure if I would like the combination of maple and bacon but it is delicious.  Combined with the pancake bites that are more savory, these are the perfect little bites.

Pancake Bites with Maple Bacon

 

These are best served immediately but you can save leftovers in the refrigerator.  I caught the guys grabbing in the mornings for a quick breakfast.

If you really wanted to make these sweeter, you could add maple to the bacon as it cooks or after it is done cooking.  You can also make a candied bacon with maple and brown sugar.

Maple Bacon Pancake Bites

Maple and bacon wrapped up in a perfect little bite.  The maple bacon pancake bites are a wonderful way to start your morning.

Ingredients

Pancake Bites

  • Follow pancake mix box instructions Approx. 2 cups of the mix

For the icing:

  • ½ block cream cheese softened
  • 1 cup confectioners sugar
  • ¼ cup maple syrup

For the topping:

  • 1/2 pound bacon cooked crisp and finely chopped

Instructions

Pancake Bites:

  1. Preheat oven to 425 degrees.

  2. Prepare pancake mix according to box instructions. I used Hungry Jack light and fluffy so it was 2 cups mix and 1 1/2 cups water.

  3. Grease two mini cupcake pans and fill each cup 2/3 full of the pancake batter.

  4. Bake for 10-12 minutes until a toothpick inserted in the center comes out clean.

  5. Set the pancake bites on a cooling rack to cool once they are baked.

Icing:

  1. Using a hand mixer, combine the cream cheese, sugar, and maple syrup.

  2. Once the pancake bites are completely cooled, dip or spread the icing onto the bites.

Bacon Topping:

  1. Fry the bacon until cooked through and chop into fine pieces. Set aside.

  2. Top with bacon crumbles and serve. Any leftovers should be kept in the refrigerator.
