Many years ago, my family attended a wedding that had really good food. Two appetizers that stood out was the sugar grapes and Parmesan chicken skewers.
My family loved them so much that I set out to try to recreate both items.

This Easy Parmesan Chicken recipe is my recreation of the Parmesan chicken skewers.
The sugar grapes are a huge hit every time I take them to parties so i’ll have to share that recipe one day and update it here. It’s really just soaking red grapes overnight in alcohol (I usually go with champagne) and then coating them in sugar. So goooooood!!!
This recipe is versatile so you can make chicken breasts, tenders, nuggets… or you can skewer it like they did. You can also cook these in the oven or crust the outside on the stove and heat through in the oven.

Easy Parmesan Chicken
Perfect quick, easy weeknight meal that the whole family will enjoy.
Ingredients
- 1 lb chicken breast
- 1 ea egg
- 1 cup milk
- 1 cup Italian bread crumbs
- 2/3 cup parmesan cheese grated
- 1/2 tbsp Oregano
- 1/2 tbsp Basil
- 1/4 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
Instructions

Combine the egg and milk in a medium sized bowl and whisk together. Set aside.

Combine the bread crumbs, parmesan cheese, Oregano, Basil, salt, and pepper in a small baking dish or plate. Set aside.

Put each chicken breast between two pieces of clear plastic food wrap and pound until each piece is the same thickness throughout.

Lightly bread each piece of chicken in the bread crumb mixture.

Then dip each piece of chicken in the egg/milk mixture and bread again in the bread crumb mixture. Repeat until all pieces have been coated.

Heat 2 tbsp olive oil in medium sized pan over medium heat. It's very important that the pan gets hot enough to crust the outside but not too hot or the crust will burn. Once the pan is ready, carefully place in 2-3 pieces of chicken. Allow to cook until cooked all the way through, usually 5 minutes per side.

Serve immediately.
