Valentine’s Day Heart Meatloaf will make your family feel the love!

Valentine’s Day usually means fancy food, flowers, chocolates, and champagne. But sometimes the whole family comes together to enjoy a meal.

Making this heart meatloaf will impress the kids and won’t take much time in the kitchen. I always like to make food fun. The older kids may roll their eyes but the younger ones usually love it.

I feel like everyone has a favorite meatloaf recipe. I use the ingredients that my mom and grandma have always used. None of us actually have exact measurements for it.

It’s a little of this and a little of that when we prepare our recipe. We keep it simple:

  • Pound of ground beef
  • 1 egg
  • Oats
  • Ketchup- for the outside or top of meatloaf
  • Spices- salt, pepper, garlic
  • Tomato juice- I don’t always use this. Sometimes I just use ketchup instead.

The first time I wrapped my meatloaf in bacon was when I made Mummy Meatloaf for Halloween. My husband said it was the best meatloaf I had ever made. I didn’t do anything different except the bacon wrap. It adds more flavor and keeps the meatloaf from drying out <– see how I didn’t use the word moist there!!!

I also love making meatloaf in mini loaf tins or muffin tins. It makes them cook a lot quicker and each person gets their own individual serving. You could make these heart meatloaves into mini, individual ones.

To make the heart shape, I combined all of the ingredients and then formed a ball. I placed the ball on a greased sheet pan and started shaping into a heart. The toughest part is making sure you get it equal in thickness to it cooks evenly.

Lay pieces of uncooked bacon across the heart in whatever pattern you’d like. You could even do it in a basket weave pattern if you want to spend the extra time doing it.

I cooked my meatloaf at 350 degrees for 35 minutes. The bacon will not be crisp on top. I turn the oven on broil and cook the meatloaf under the broiler for an additional 5 minutes or until bacon is crisp.

My one suggestion is to make sure you cut a larger “v” on top to make the heart shape. Once I added the bacon, it wasn’t as defined as I wanted it to be.
