Easy Pepperoni Pizza Flats with Crispy Cheese

Pepperoni pizza flats are like pizza’s rebellious brother.

These mini pizzas are the perfect choice for a speedy dinner. And let’s not forget, pizza has a magical power over kids so it’s a guaranteed win!

These can also be really delicious for adults, too. Instead of pepperoni try thin tomato slices and basil or slices of chicken with bbq sauce. My favorite is buffalo sauce, thin slices of chicken, and a ranch drizzle after cooking.

If you’re not in a hurry, use your favorite homemade pizza dough. I used my deep-dish pizza dough recipe. Refrigerated store-bought pizza dough will work just as great.

First, line a baking sheet with parchment paper. Then, brush each spot where you’ll be making a pizza flat with butter or olive oil. This ensures that the cheese doesn’t stick at all. You’ll need 8 spots. I used fresh mozzarella but shredded works just as great. I tried some with slices of cheese and also cut up. Both turned out the same so any way you “cut the cheese” lol will work.

Next, add your toppings. I used pepperoni slices. You could also add sausage, chicken, basil, pesto, olives, peppers, etc.

This is not an ad but have you tried the Rao products? They are definitely more expensive but the taste is so much better than other jarred sauces. If I don’t have time for homemade sauce, Rao’s is my next choice. Whatever sauce you choose, spread a little on top of your toppings.

Take 1/8th of the pizza dough and stretch it out over the toppings. Do this for each of the pizza flats. Brush each dough piece with melted butter and then sprinkle some Italian seasoning, garlic powder, red pepper flakes, or other favorite pizza flavoring on each.

Before baking, slice down the middle so they don’t puff up. The color should be a light golden brown when done.

Let cool for about 2 minutes before flipping over. Enjoy immediately.

Mini Pepperoni Pizza Flats

Kids love pizza right?!? Give them their own little handheld pizzas that are easy to eat and super tasty.

Ingredients

  • 1 tube pizza dough or homemade pizza dough
  • 1 pkg pepperonis or favorite toppings
  • 8 tbsp pizza sauce
  • 1 8oz mozzarella cheese
  • 8 tbsp olive oil or melted butter for under and on top of pizza flats
  • seasoning to taste

Instructions

  1. Preheat oven to 400 degrees.

  2. Line a large baking sheet with parchment paper. Brush olive oil or melted butter in 8 areas on the baking sheet where your pizza flats will be made.

  3. Place a slice or mound of shredded mozzarella on each spot where you brushed the olive oil or butter.

  4. Place pepperonis or desired toppings on the cheese.

  5. Spread about 1 tablespoon of pizza sauce on the toppings.

  6. Divide the tube of pizza dough or homemade pizza dough into 8 pieces. Spread each piece out big enough to cover the toppings, cheese, and sauce. Place over top of the pizza ingredients.

  7. Brush pizza dough with melted butter and sprinkle on garlic powder, italian seasoning, red pepper flakes, or your favorite pizza seasonings. With a sharp knife, make a small slit in the top of each pizza.

  8. Bake in oven for 10 minutes. Dough should be a nice golden brown. Let cool for 2 minutes before flipping over. Serve immediately.
